Properly cared for, antelope meat is superb, perhaps even the best of the wild game. As others have said, you must skin it and cool it down immediately. If this is done, it has a delicate texture without the gamey flavor some deer have. A final internal temperature of degrees F should leave your antelope moist, juicy, and delicious. Roasts should be cooked at low temperatures, degrees F to degrees F, for several hours until fork tender. Venison originally meant the meat of a game animal but now refers primarily to the meat of elk or deer or antelope in South Africa.
Venison can be used to refer to any part of the animal, so long as it can be consumed, including the internal organs. A trophy pronghorn is generally considered one with horns at least 16 inches long with a 7-inch circumference at the base. The prongs should measure at least 5 inches.
The spread of the horns is not a scoring consideration, as it is with deer, and has no effect on the final score of the trophy. Most hunters focus on this.

I got mine on a cool day and from the time I shot it to the time it was in my ice chest cooling off was just over an hour and it was 1 shot to the lungs at 60 yds so no bloodshot meat to mess it up.

One BIG mistake a lot of 1st time lope hunters do is taint the meat without knowing they did that. Ever see those pictures with the guys holding onto the horns or onto the cheeks? From its tender texture to the sweet, mild flavoring, pronghorn meat is the one wild game that reminds me of autumn on the prairie.

From the second it hit the skillet, I knew something was wrong and confirmed it with a bite. Secret to have good pronghorn meat is to get the animal skinned and on ice.

What "jay" said is true of any game animal. The quicker you get it in the 'fridge, the better! The trick to Pronghorn is getting the skin off asap,thier hair is hollow and holds the heat. The best game meat I have ever eaten! I like antelope at least as much as venison especially if they have been eating sage. The secret is to get them skinned asap! Some folks don't like antelope. I don't know that I would say they taste like a mule deer but I always liked it.
Antelope seasons often run in warm weather. These guys are right. Gut them and skin them quickly so they can cool out. They make excellent chili! As long as you harvest them when they are calm and haven't been ran to hell and back and skin them and take care of the meat I would take an antelope over any deer any day no question.
We eat alot of game in our house and Pronghorn is an all time favorite! In Wyoming, antelope live on sage, and it comes through in the meat.
